   Wine Storage began in the underground caves of Europe.  These caves provided the consistent storing conditions that allowed wine to age at an elegant pace.  By convention, these conditions have become the standard for modern wine cellars:  55-58 degrees and 55-65% relative humidity.
Our wine cellar refrigeration systems maintain these ideal conditions, gracefully aging your wines, then keeping them at their peak for years to come.

EXTREMES - Nothing is more detrimental to your wine than extreme heat or cold. 

  • DAILY CHANGES-  As the temperature rises, your bottle of wine expands; but, the wine expands    up to seven times more than the glass bottle.  This process creates pressure, which forces wine out of the bottle. When the bottle cools a vacuum forms, which sucks oxygen rich air into the bottle.  Ullage is the oxygen free air within the bottle.  Unregulated, rapid temperature fluctuations prematurely age and deteriorate your wine. 

  • HUMIDITY - 55-65%  is the ideal humidity range for stable wine aging.  Humidity levels of 80% or higher will cause mold to form and rot the labels.  Lower levels will increase the amount of ullage forming in the bottle and will dry-out the glue beneath the label. 

    WINE BREATHES- Wine breathes through the cork and ages in the process. Environmental changes (fluctuations in temperature and humidity) accelerate the aging process. Excessive oxidation causes the wine to become bitter, as it would in a glass overnight.  Wine requires oxidation to mature; but, it must be regulated to assure adverse conditions do not affect the aging of your wine.  The pace of breathing is faster at higher temperatures and slower at lower temperatures. 

    I. Types of Cellar Refrigeration


       
    A. The economical self-contained Breezaire Cooling unit.

         -   Both units are mounted through the wall, exhausting into an adjacent room.
    Size of unit determined by calculating the cubic feet of the room.
    This unit CANNOT be exhausted outside or into a garage.
    The room where it will be exhausting to must be a conditioned room so that the heat can be dissipated. The amount of heat exhausted is very similar to that of a large refrigerator or freezer.
    This unit will keep the room at 55 degrees, and it will provide 55 - 70 percent humidity. The humidity is created when the air passes over the condensate drain pan, picks up the moisture, and introduces it into the air.
    This unit does not require a drain However, there is a hose located underneath the Breezaire that needs to be monitored. In certain conditions, there may be excessive condensation. When this happens,the drain fills up faster that the unit can dispel it into the air. If not monitored, the drain pan will overflow and leak into the wall.

    From a small closet up to a 2,000 cubic feet wine cellar, there is a Breezaire self -contained, through- the -wall refrigeration unit to fit. Breezaire is the oldest and most respected name in wine cellar refrigeration. Standard models and prices are listed below. Electronic units and split systems are also available. The units are mounted in an opening in the cellar wall and exhaust into an adjacent room.
    They plug into a standard 120 volt outlet. All units have a 5 YEAR WARRANTY on the condensor and parts and a 1 YEAR WARRANTY on labor and shipping.

    WHISPERKOOL


      To age optimally, wine requires a balance of temperature and humidity. The temperature affects the rate of maturation while the right humidity keeps corks in good shape during the aging process. Dry corks crack and allow wine to oxidize. Excessively wet corks rot, causing the wine to become corked.
    Wine collectors agree that the ideal temperature for maturing fine wines is 55°F-57°F and that the humidity should be carefully balanced between 50%-70%.
    WhisperKOOL achieves these optimum conditions by cooling the cellar slowly. As the temperature in the cellar begins to drop, the relative humidity will rise, creating the ideal environment for aging wine. WhisperKOOL incorporates an efficient environmental stabilization system in a compact, easy-to-install, self-contained unit. It is built in a variety of sizes for wine cellars, ranging from 300-to-2,000 cubic feet.
    The unique difference between the WhisperKOOL system and traditional air-conditioning units is the maintenance of well-conditioned humidity. Traditional air-conditioning units are designed to cool air quickly; as a result, humidity is removed, leaving air dehydrated. The compact size of  the WhisperKool system was designed to be space efficient, flexible and easy to install.  The shape amplifies natural air currents for efficient temperature disribution  and circulation.  Advanced contols reside on an angled panel for easy access when the WhisperKool is mounted high on a wall.  Rear-flange mounting eliminates the need for a supporting shelf, making installation a snap.  Simply cut and frame a hole, slide the WhisperKool system through, and insert the finishing screws -- that's it!

        B. Split Refrigeration
         -   Size determined by doing a heatloss calculation.
         -   Same basic principals as above except that the evaporator and condenser are split.
         -   The evaporator coil is physically in the room, while the condenser is usually placed outside or in another conditioned room
         -   This system requires a permanent drain.
         -   The only thing needed between the two units is copper tubing for the liquid line and suction line (specs contingent on sizing).

         C.  Split Air Handler
          -   Size determined by doing a heatloss calculation.
          -   Same basic principals as above except that this system is completely ducted.
          -   Similar in principal to central air conditioning.
          -   Has the capability of being able to physically control the humidity by adding a humidifier and a dehumidifier.
          -   Also has the ability to add a temperature/humidity alarm.
          -   Duct sizing and number of ducts depends on size of unit, and the "throw feet" rating of the grills used.

         D.  WCI Self Contained Unit
          -   Air Handler and indoor condenser all in one package.
          -   Supply and return air is ducted to and from machine.
          -   Drain for excess condensation needed.
          -   Has the ability to add humidification and dehumidification.

    Breezaire Split Air Systems

       Starting at 1500 BTU's, the Split Air System is the ultimate in refrigeration for wine cellars. Unlike other systems, the Split Air condenser is located outside the wine cellar. Standard split refrigeration units are designed to remove excessive humidity but they cannot introduce humidity 
    The split air system is the recommended unit for high temperature environments. In many cases where there is a great temperature differential during the daytime hours, the split air system is the only way to go. We recommend you seriously consider this option and install an outside condenser. These systems usually work for 15 YEARS instead of 3-5 years for most regular systems. Obviously, there has to be a reason.
